While it's still summer, I say we ought to spend as much time outside as possible, preferably next to gleaming bodies of water.
The Pavilion Bar on top of the Market Pavilion Hotel definitely fits this bill, with gorgeous rooftop views of the city and even a swimming pool.
Bartender Adam Griffin can mix up your favorite drink for sipping al fresco, and share stories about what happens on the roof after dark.
Q: How long have you worked at the Pavilion Bar?
A: For about six months.
Q: What's your bartending background?
A: Well, I bartend downstairs a lot, in Grill 225. I go back and forth.
Q: What's special about drinking at the Pavilion Bar?
A: Definitely the view! And the charismatic service (laughs).
Q: What's the best specialty cocktail on the menu?
A: I'm a big fan of our strawberry kiwi mojito.
Q: What shot do you take pride in preparing?
A: It's called a marijuana milkshake. It's got Frangelico, midori and a little bit of cream. It gets its name from the green tint. It isn't a heavy shot, which means it's great for lightweights and people who have already had a few.

Q: Do people actually go swimming after drinking up here?
A: At least once a week someone will jump in and have to be taken out of it! Just last weekend a guy jumped in wearing his underwear. We couldn't figure out how he stripped down without anyone noticing!
Q: Are most of the guests up here staying in the hotel?
A: Not at all. We get lots of locals, and just a lot of people from everywhere.
Q: What's the best food on your menu?
A: The pizzas are phenomenal and the Poolside Club is delicious. Also, I like the Kobe beef burger.
Q: Have you actually served a celebrity up here?
A: Oh yeah. We served Jill Biden (Joe's wife) last week. Also, we met the guy who played Ben on "Lost" (Michael Emerson). He also brought his wife who stars in "True Blood" (Carrie Preston). But I don't watch those shows.
Q: What's your favorite bar in Charleston?
A: I'd have to say Squeeze. It's our hangout after work.
Q: Any advice for drinkers in Charleston?
A: Don't close out your tab after one Bud Light.
